Dark Muscovado is a natural, unrefined cane sugar that is made from sugar cane in Mauritius in the old traditional way. The dark brown, soft wet sugar has a slightly sticky texture and, thanks to its aromatic syrup residues, has a broad spectrum ranging from caramel to a light note of liquorice. Dark Muscovado brings depth of flavor to a strong espresso and full flavor to marinades, spicy sauces, chutneys, chocolate and pralines. Wet sugar can dry out due to its natural state. If the sugar has become too hard for you, simply place a damp cloth over it overnight and the sugar will soften again.
